IPA Beer Cheese Dip
2 tablespoons butter
3 tablespoons all-purpose flour
1/2 cup of milk
3/4 cup of Brew Free or Die IPA (or one of your preference)
1 teaspoon worcestershire sauce
1 1/2 teaspoons ground mustard
optional- hot sauce to taste
12 ounces of sharp cheddar, shredded (do not purchase pre-shredded cheese)
I love the summer for it’s beer festivals, vacations, and most of all, its barbecues. I live in the Central Valley, and the heat waves here make it difficult to do a lot of cooking inside. I try to keep my oven, and stove use to a minimum, but will always make an exception for this quick, easy BBQ appetizer- my IPA beer cheese dip.
Using a sauce pan, melt the butter on medium heat. Add the flour, and stir consistently till combed. Slowly combine the milk, and beer. Increase the heat to medium high, and bring into a simmer. Add your mustard, worcestershire sauce, and optional hot sauce. Whisk consistently for 4-6 minutes until the mixture thickens. Slowly add your cheese, still while stirring. I recommend adding in smaller amounts, and waiting until the cheese melts thoroughly. Serve immediately. I usually top my dip off with a spice like smoked paprika for a little extra color, and flavor. Serve with any sides of your preference. I highly recommend homemade pretzels, veggies, or chips!
This recipe is great, because it leaves plenty of room for creativity, and takes less than 10 minutes to make!
