Baja Brewing

K and I were incredibly fortunate to visit Baja California in this new year. While visiting Cabo, we found a little local craft brewery. Baja Brewing is located in Cabo Del San José, with two additional tap rooms in Cabo San Lucas.

It was a quite day when we arrived at the taproom/restaurant. No one else was seated at the bar, so we promptly given a menu, and started chatting it up in a mixture of English, and broken Spanish.

As you can see from the menu, they incorporate both Mexican and American beer styles into their menu, and their current seasonal was a low ABV barleywine (8.5%).

My favorites were the blonde, the escorpion negro (it is everything Negra Modelo wishes it was!), and the Peyote Pale, which had a sweeter English malt compared to many American pales. This gave it a fuller body, and made it a little sweeter. I thought overall, that the beers were fantastic. After talking with our bartender, Celeste, about our passion for beer, she snuck to the back, and was able to get us a private tour with the brewmaster, Mario! He was busy brewing that day, so otherwise, there were no public tours.

It seems they have an owner from Colorado, who wanted to have a craft brewery down in Cabo. It was really interesting hearing the difficulties they experienced with opening. The two major set backs were: 1)getting equipment (they bought used equipment in CO), and 2) attaining ingredients. The brewing space is very small, so I was surprised to learn that they keg, bottle, and create pilot batches all in the same small place. Mario, was very insecure about his English, but was very thorough in describing each piece of equipment, and the whole process. He also let us taste fermenting pilot batches, including an organic blonde ale! We were very lucky to have this exclusive tour, and experience at Baja Brewing.

As we finished up our pints, and did a little shopping in their gift shop, Celeste the bartender called me over to say she had a little something for us to take on the road.

A little more Peliroja Red for road? Don’t mind if I do! Thank you Baja Brewing, for such a wonderful experience, and for such tasty beers!!!
